Blueberry Pancakes, Chocolate Chip Pancakes

Finally the good weather is here! My goals for today were to buy a bathingsuit (online, if possible) get a cheap flour sifter, buy some things to help with cabinet storage – especially for herbs/spices. That cabinet is total mayhem. It’s damn near impossible to find anything when I need it – and I hardly ever remember to pull all the ingredients before using them…

This morning I woke up late, 8am! It was glorious! I made myself an ice coffee. And poked around in the fridge til I decided to make pancakes. The way I make coffee is how sone people I know make ice coffee- double strength. This means after being in the fridge overnight, you can pour it over ice no problem. A spoon full of sugar (helps coffee go down too…) and a dash of half and half.

I found this recipe for blueberry ricotta pancakes and decided that I’d give it a try. I like pancakes, though French toast is hands down the more popular breakfast in this house.

Pancake Base

2 cups (less 3 tablespoons) ricotta cheese
1/3 cup granulated sugar
3 medium eggs
1 teaspoon vanilla extract
2/3 cup all purpose flour

Mix ricotta and sugar til mixed in, add wet ingredients.
Fold in flour til combined.

Separate into two bowls.

In one bowl zest half a lemon (I’d probably go with less lemon an 1/2 that I used) and fold in 1 cup of blueberries.

In second bowl, mix in 4-5 tablespoons of mini semi-sweet chocolate chips.

Use a 1/4 cup measure to put pancakes on a greased griddle.

Watch the sides cook about 4 minutes each side until golden brown. Put paper towel down on plate for cooked pancakes so they don’t sweat and end up in a puddle. Serve with powdered sugar or maple syrup, which ever you prefer.

What I learned this morning is that one of my roommates dislikes ricotta enough that I should’ve said I made these pancakes with lead, that’s why they were so heavy. My boyfriend still hates blueberries so I should’ve just made them all with chocolate chips. Also, if I drink more than one cup of iced coffee, I don’t really want to eat after….

I ate these without putting anything on them. They tasted good plain to me. Plus it made it easier for me to walk around while eating them, and checking laundry, using my computer and getting the keyboard super messy.
